2 Great Mexican Soups You Should Try

Most people think of burritos, tacos, and enchiladas when they think of Mexican food. Nonetheless, there are other great Mexican dishes that have some great flavors. Here are two soups that are a wonderful break from the Mexican dishes that you normally eat:

Taco Soup

  • 1 pound of ground beef
  • 2 cups of chopped white onion
  • 3 cans (45 ounces) of kidney beans, drained
  • 2 cans (20 ounces) of condensed tomato soup
  • 1 quart of tomato juice
  • 2 cans (24 ounces) of black beans, drained
  • 1/4 cup of taco seasoning
  • 1 pint of fresh salsa
  • 2 cans (30 ounces) of chunky beef soup

Cook the ground beef and onion together in the bottom of a large saucepan. Once the ground beef is cooked, add the remaining ingredients and simmer on low heat for 45 minutes, until the flavors are all well combined. Serve with tortilla chips, cheddar cheese, and sour cream.

This recipe makes a large amount of soup, so it works best when you are going to a potluck or hosting a large party. It also freezes well, so you can cook a large pot on one day and enjoy the soup for many days to come. This soup is hearty and flavorful. It works wonderful as the central feature of any meal.

Chicken Avocado Soup

  • 2 pounds of chicken breast
  • 3 cups of chicken stock
  • 1 teaspoon of minced garlic
  • 2 tablespoons of chopped white onion
  • 2 tablespoons of extra virgin olive oil
  • 1 tablespoon of sliced green onion
  • 1 cup of diced avocado
  • 1/2 cup of loosely packed cilantro

Saute the white onion and garlic in 1 tablespoon of olive oil until the onion is translucent. Add the chicken stock to the onion and garlic and cook until warm. Cube and pan fry the chicken breast in a separate pan using the other tablespoon of olive oil. Cook the chicken until there is a nice crust on each piece. Remove the chicken and the stock from the heat. Put the stock and chicken in a bowl and add the avocado, cilantro, and green onion. Enjoy immediately.

This recipe makes enough for 4 people, so it is ideal for when you are alone with your family. It has a great fresh flavor thanks to the fresh cilantro and onion added at the end. The avocado adds a great smooth texture to the soup.

The next time you look to make a Mexican meal, try one of these soups. You will be glad you did! If you have other questions or want to know more about Mexican food, try contacting a company like Hacienda Restaurant with your questions.
