Four Creative Ways To Serve Corned Beef

Tender and flavorful, corned beef obtains its signature taste when the brisket of meat is cured in a brine of salt "corns" and other pickling spices. You can either buy prepacked corned beef for convenience, or make it yourself. Corned beef is traditionally served on St. Patrick's Day with boiled red potatoes and cabbage on the side. Although this is the most popular way of enjoying corned beef, there are many other ways to serve it. 

The next time you have leftover corned beef or just want to try something new with the meat, consider these four ideas:

1. Corned Beef and Eggs

For hearty and protein-rich breakfast any day of the week, try serving corned beef with eggs. Slice the corned beef thinly and serve it alongside your favorite style of eggs, such as sunny-side-up, scrambled or poached. As another idea that kids may love, cut the beef into small pieces and scramble it into eggs. 

Round out the filling  breakfast with toast and fresh fruit, such as berries, pineapple slices or melon.

2. Corned Beef Sandwich

Another delicious way to serve leftover sliced corned beef is on sandwiches. You can substitute the corned beef for pastrami, and serve it on marbled rye bread with sauerkraut, horseradish, swiss cheese. coarse mustard and grilled onions.

You can also get creative by filling the corned beef sandwich with any of your favorite fixings, such as cheddar cheese, tomatoes or mayonaise. Corned beef slices may also make flavorful additions to grilled cheese sandwiches. Round out the meal with a variety of sides, such as potato chips, crispy onion rings, french fries, coleslaw or potato salad.

3. Corned Beef with Pasta

Although corned beef isn't typically served in pasta dishes, it can still make a great combination. Add small pieces of corned beef to rich, creamy sauces such as Alfredo. The meat will give the mild-flavored sauce a salty, savory kick.

Complement the sauce with vegetables such as peas and carrots, and serve it over your favorite type of pasta, such as penne or linguine. 

4. Corned Beef Salad

Counteract the richness of corned beef by adding the meat to a salad. Cut the beef into small cubes or strips, and serve it over chopped chef-style salads in place of the typical ham or chicken. Fill out the salad with any of your preferred vegetables, and top it with croutons and a creamy dressing such as ranch.
